Why we opened on Sainte-Catherine
Incense Jay Barbers grew from a simple frustration: too many chairs that treat men's grooming as a conveyor belt. We wanted a room in Bordeaux where the cut is the point — where timing, listening, and a clean finish matter more than loud playlists or stacked promotions. Rue Sainte-Catherine gives us footfall and daylight; we give back a calmer tempo behind the door.
The name pairs the domain stem with the craft. Jay is the through-line of the brand — a mark you can say out loud — and the shop is built around barbering, not incense as a product line. What you smell here is clean linen, tonic, and occasionally coffee from the corner. What you leave with is a shape that holds.
We work Tuesday to Saturday so the week has a clear rhythm. Mondays are for tools, stock, and rest. Sundays the street belongs to shoppers; we keep the shutters down and the scissors oiled for the week ahead.
How the room runs
One client at a time gets full attention at the chair. We do not stack overlapping appointments that force rushed finishes. If we are running late, we message. If a walk-in appears and we can take them without spoiling your slot, we will — otherwise we book them forward honestly.
Hygiene is non-negotiable: sterilised tools, fresh towels, and surfaces wiped between guests. Skin concerns are taken seriously; we will decline a service that risks irritation rather than push through for the till. Bordeaux summers and winter dryness both affect the scalp — tell us what you feel and we will adapt products and advice.
We are not a franchise template. Decisions about length, product, and schedule stay between you and the barber in the chair. That is the shop we wanted to walk into ourselves, so we built it at 24 Rue Sainte-Catherine.
